You may be preheating your griddle on a temperature that’s too high. The difference between grilling on a griddle and a standard gas grill, is that you preheat your griddle to the temperature that you’ll be grilling on (not always on high heat). For example, you will preheat the griddle on a low temperature if making pancakes so that they don’t immediately burn.
